1 package (16 ounces) frozen perch or other white fish fillets
1/4 cup (1/2 stick) butter or margarine
1/4 cup of lime juice (about 2 limes)
1/3 cup of shredded chedder cheese
1/3 cup of fine dry bread crumbs
Defrost fish in microwave oven following directions in defrosting chart. Set aside on paper towels.
Put butter and line juice into a one cup glass measuring cup. Heat uncovered in microwave oven to 1 1/2 to 2 minutes on high, or until butter melts. Stir lime butter and pour half into an 8-inch square glass baking dish.
Combine cheese and bread crumbs throughly. Roll each piece of fish in crumb mixture and put into the dish. Pour remaining lime butter over fish. Cover with waxed paper.
Cook in microwave oven 7 to 9 minutes on high or until fish flakes easily when tested with a fork.
