SOUPS AND SAUCES
___________HOLLANDAISE SAUCE_______________________________________

1/4 CUP (1/2 stick)butter or margarine
1/4 cup of half-and-half
2 egg yolks,beaten
1 tablespoon lemon juice or vinegar
1/4 teaspoon of salt
Dash ground red pepper

Melt butter in a 1-quart glass measuring pitcher in microwave oven (about 1
minute at high). Add half-and-half,egg yolk,lemon juice,salt and red pepper, mix throughly.  Cook uncovered 2 minutes at high, or until sauce is thickened, stir after 1 minute.     makes 3/4 cup

BARBECUE SAUCE

1 cup of ketchup
1/4 cup of packed brown sugar
1/4 cup of water
1  1/2 teaspoon of celery seed
1/4 teaspoon of salt
Dash of garlic powder
Dash of blackpepper
1 1/2 teaspoons of worcestershire sauce
1 1/2 teaspoons of prepared horseradish
1  medium onion,chopped

combine all ingredients in a 2-quart glass casserp;e. Cover with waxed paper.

Cook in microwave oven 3 minutes at high, or until hot, stir twice.
makes about 1 1/2 cups

ITALIAN MEAT SAUCE

1 cup of chopped onions
1 clove garlic, minced
1 1/2 tablespoons olive oil
1 pound ground beef
1 can (28 ounces) Italian-style tomatoes, drained and cut in pieces
2 cans (6 ounces each) tomato paste
1 cup of water
1 1/2 teaspoon of salt
1/2 teaspoon pepper
1 teaspoon oregno leaves

Combine onion,garlic and oil in a 2-quart glass measuring pitcher. Cook uncovered in microwave oven 3 to 5 minutes at high, or until onion is soft; stir once.

Add meat and mix well. Cover with waxed paper. Cook in microwave oven 4 to 5 minutes at high, or until meat is no longer pink; stir once. Remove excess fat.
Stir remaining ingredients into meat mixture. Cook uncovered in microwave oven 5 to 8 minutes at high, or until bubbly; stir once.
makes 1 1/2 quarts
