Mark and Gerry Irvine run this individual but sophisticated hotel which has belonged to the family since the late 60's. Over the years the hotel has established itself as an oasis of civilisation hidden away in a stunningly beautiful, but still wild and untouched landscape.

Nearly everything you eat here is home produced or locally caught. Scallops, lobsters, langoustines, crabs, halibut, turbot, salmon, venison, big brown eggs, wholesome brown bread fresh from the oven - the list of real food is endless. With such wonderfully fresh ingredients the chef, Chris Firth-Bernard, inevitably provides delicious and healthy fare for which he has won a Michelin Star and Scottish Chef of the Year. Eating well, sleeping well and moving about in beautiful surroundings is a therapy for which many return year after year.

There is a marvellous amount of nothing to do in Achiltibuie. After breafast Mark and Gerry will always be happy to talk to you about fishing, walking, or bird watching. A collection of tried and favourite walks may be found by every bed.

The Hectoria, a local cruise boat takes people round the islands to see the seals and rare birds. Inverewe Gardens, the Inverpolly Nature Reserve and the coast of Sutherland can all be visited omfortably from here. The sands of Achnahaird are just down the road and there is always a sheltered rock if you just want to sit and soak up the endless tranquility.

We like guests who can make the most of this beautiful wilderness of islands and mountains. Bring your wellingtons, sensible shoes, bring your dog if you like - so long as he does not appear in the dining room or lounge - and sunglasses and midge cream, cameras, paint boxes, binoculars, thermos flasks and comfortable old clothes. We have the Gulf Stream at the foot of the croft, but the weather can be anything form Arctic to Aegean inside a week.
